Most of the lamb and goat we slaughter are local (in Ontario) we usually choose about 40 or 50 lamb and goat out of hundreds. We only buy young and top quality lamb and goat. There are more than 10 different breeds of lamb and goat.
Don’t be deceived by the size of the lamb. Some bread of lamb and goat are very small. A full grown lamb is about 50-60 lbs live. It looks small but the meat is tough, and smells.
There are several other breeds of lamb that are 7, 8, or 10 months old and weigh 90 – 100 lbs live and are very meaty. The dressed weight is 45-50 lbs. The meat is very tasty and there is no smell. A little fat in the meat of a good quality lamb indicates that the lamb was fed and breaded well. A regular cut of lamb or goat for most of our customers from India, Pakistan, and Bangladesh 3 fingers. Our Afghan, Iranian, and Arab customers choose a 4 fingered cut. Our Somali customers usually go with a half hand cut. You can also choose your cut from our chart. We sell only whole lamb and goat.
There are several options to use LEG cuts: Roast, Broil, Panbroil, Panfry, Braise or Cook in liquid.
Our tender and tasty rib chops are hand-trimmed and provide you the highest level of freshness and
quality. Rib chops are the most tender and expensive as well as the tastiest part of the lamb.
